Clearfield® White Spinach & Mushroom Breakfast Burritos

Ingredients

  • Eggs
    16
  • Clearfield® White American Cheese – torn into pieces (shredded)
    8 oz.
  • Salt
    1/4 Tsp.
  • Pepper
    1/4 Tsp.
  • Fresh Spinach
    1-2 Cups
  • Large Onion, Thinly Sliced
    1 ea.
  • Red Bell Pepper, Thinly Sliced
    1/2 ea.
  • White Button Mushrooms, diced
    4-5 ea.
  • Vegetable Oil
    1 Tbsp.
  • Butter
    2 Tsp.
  • Breakfast Sausage Patties, Chopped

  • Spinach Flavored Flour Tortillas
    4 (8 in.)

Directions

  1. 1.

    In a large pan, pour oil and heat until warm.

    Add in sliced onion, red bell pepper and mushrooms. Sauté.

  3. 3.

    Fold in fresh spinach into the same pan as the other cooked vegetables. Sauté.

    Set vegetable mixture aside.

  5. 5.

    Crack eggs into a large bowl; season with salt and pepper and whisk until completely combined.

    Heat 2 teaspoons butter in an 8-inch nonstick skillet until melted. Pour in whisked eggs. Cook through and set aside.

    Warm tortillas on a hot skillet on each side and place into a napkin lined basket or plate. Cover.

    Evenly fill each tortilla with chopped breakfast patties, eggs, sautéed vegetables and Clearfield® White American Cheese. Fold the ends & roll up.

  9. 9.

    If desired, garnish the top with more Clearfield® White American Cheese
