Cheesy Clearfield® Hot Process Pepper Jack Breakfast Burritos

Is there any better way to start the day than with a spicy sausage, egg, and cheese burrito? Here, we combine fluffy scrambled eggs with chopped vegetables and the kick of Clearfield® Hot Process Pepper Jack cheese. The best part? It only takes about 10 minutes to make.

Ingredients

  • Eggs
    16
  • Clearfield® Hot Process Pepper Jack
    American Cheese, shredded
    8 oz.
  • Salt
    1/4 Tsp.
  • Pepper
    1/4 Tsp.
  • Large Onion, thinly sliced
    1
  • Red Bell Pepper, thinly sliced
    1/2
  • Green Bell Pepper, thinly sliced
    1/2
  • Vegetable Oil
    1 Tbsp.
  • Butter
    1 Tsp.
  • Breakfast Sausage Patties, chopped

  • Chipotle or Southwest Flavored Tortilla Wraps
    4 (8 in.)

Directions

    In a large pan, pour oil and heat until warm.

    Add in sliced onion, red bell pepper and green bell pepper. Sauté

  3. 3.

    Set pepper and onion mixture aside.

  4. 4.

    Crack eggs into a large bowl; season with salt and pepper and whisk until completely combined.

    Heat 2 teaspoons butter in an 8-inch nonstick skillet until melted. Pour in whisked eggs. Cook through and set aside.

    Warm tortillas on a hot skillet on each side and place into a napkin lined basket or plate. Cover.

    Evenly fill each tortilla with chopped breakfast patties, eggs, onion, bell peppers and Clearfield® Hot Process Pepper Jack American Cheese. Fold the ends & roll up.

    If desired, garnish the top with more Clearfield® Hot Process Pepper Jack American Cheese
