Directions

Prep:
Crack eggs into a large bowl; season with salt and pepper and whisk until completely combined.

To cook each omelet:
Heat 2 teaspoons melted butter in an 8-inch nonstick skillet. Pour in ½ cup whisked eggs. Let the eggs cook for a few seconds. Using a spatula, push the cooked eggs towards the center of the pan, tilting the pan, to let the uncooked eggs run towards the cleared edges.

When the middle is still a bit runny, add 2 slices Clearfield® Hot Process Pepper Jack American Cheese and 2 Tbsp. taco meat on half of the omelet and carefully fold the omelet over. Let cook until the cheese melts. Transfer omelet to a plate. Repeat until remaining omelets are made.

Serve with desired sides such as 2 Tbsp. sour cream, 2 Tbsp. salsa and 2 Tbsp guacamole on the side of each omelet.
